Dear Reader,

Right now our children are facing unprecedented health challenges—obesity, diabetes, asthma, allergies, depression and worse. Many scientists predict they will be the first generation in American history to live shorter lives than their parents. But this future is not inevitable. I frequently read about or hear from people who are deeply concerned about children's food and life quality.

I notice that those most committed to kids' health are often moms, dads and teachers. They see the severe impact that food has on the children they care about. At Integrative Nutrition, we've helped some of these individuals transform their commitment into a new career path that makes a powerful difference in the health of their families, clients and communities.

These alumni are out there improving their school lunch programs, teaching family cooking classes, writing their local representatives, filming documentaries, writing books and much more. They are leaders, showing people a better path to health for the next generation.

I believe every child has the right to fresh, healthy food and a strong, vital future. So later this year Integrative Nutrition will be providing online tools and systems for contacting government and corporate officials about health and nutrition issues. This will make it easier for everyone to make his or her voice heard on behalf of our children.

I am very proud of our community for being on the forefront of this important issue. We know that the possibilities for positive change are endless, and that our children deserve our best efforts. Recipe: Collards with Dill and Parsley

As spring approaches, extra greens in your diet will help your body metabolize the fats and heavy foods of winter and prepare you for warmer weather. Collard greens are nutritional powerhouses, packed with phytonutrients that trigger your cells detoxification mechanisms. They are also very rich in calcium and vitamins A and C. Combine your greens with fresh herbs like parsley and dill to give your tongue an early taste of spring.

Latham and Phebe met in class and discovered a shared vision to work with families and kids. Integrative Nutrition gave them the confidence to start their own business in New York City. Since graduating, they have created a diverse culinary company that offers nutritional counseling to families, lectures to busy parents and cooking classes for kids.

Bookshelf: Whole Life Nutrition

Integrative Nutrition Publishing is pleased to announce that our first alumni-authored book will be released this spring. Whole Life Nutrition, by graduates Jeannette Bessinger and Tracee Yablon-Brenner, is designed to help busy families break the cycle of fast food and fast entertainment and upgrade to lives of greater health and balance. The book combines simple lifestyle guidelines with an innovative approach to everyday cooking.
